Gluten-free, Dairy-free Banana Bread Deliciousnessss

Being gluten-free comes with some issues. Like missing that warm loaf of bread hot out of the oven. Hmmmmm! So I ventured out to make my husband’s favorite kind of bread, banana bread, but gluten-free. He is a gluten-lover, so I needed an awesome recipe that would be up to par with normal banana bread. I found Silvana’s recipe and tweaked it (Husband doesn’t like chocolate chips in his bread so the chocolate didn’t make the cut). This recipe is so simple and easy to make, and is almost gone already!
- 1 3/4 cup all purpose gluten-free flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 2 large eggs, room temperature
- 3/4 cup granulated sugar
- 1/2 cup canola oil
- 1 1/2 cup mashed bananas (about 3)
- 2 tsp vanilla extract
Preheat the oven to 350*. Grease bread pan. In a large bowl whisk together the flour, baking powder, salt, and cinnamon. In a medium bowl whisk together the eggs, sugar, oil, bananas, and vanilla. Stir the wet ingredients into the dry to combine.
Transfer to a prepared pan. Bake until golden brown, and a toothpick comes out dry, about 35 minutes. Let cook on rack. Enjoy!
