Gluten-Free “Thai It” Chicken Noodles with Fresh Veggies

The other day I found this recipe in the June issue of the Every Day with Rachel Ray Magazine. And boy is it good. It was a light and refreshing meal, a good choice for this Spring weather. And all the fresh veggies in the dish not only added color to the plate, but also brought a lot of different flavors in one bite. There is so much goodness in this simple recipe. Try this dish. You won’t regret it!
*For gluten-free, make sure that you use gluten-free rice noodles, chicken broth, fish sauce, and soy sauce.
