Corn & Poblano Quesadillas with Salsa Verde

I think a recipe is long overdue! We have enjoyed so many delicious meals as of late, but I have failed in sharing them with you! I’m going to fix that by sharing one with you now. I tore this delicious recipe out of Rachael Ray’s magazine back in July 2012. If you love regular quesadillas, you will love this fancy, easy one. We love tacos, quesadillas, etc. so when I saw this recipe, I knew I had to try it. It is to die for with all the fresh ingredients. To make it gluten-free, I used corn tortillas instead of flour tortillas.
